This stew may be served as an appetizer or a main dish with rice, bread, or plantains and is ideal for gatherings and festivities.

  • Wash the goat meat and cut into medium-sized pieces. Season with salt and set aside.
  • Preheat your oven to 180°C (350°F) and line a baking tray with foil. Arrange the goat meat on the tray and bake for about an hour; turning halfway; until browned and tender.

  • You can smoke the goat meat over charcoal or wood for about an hour. Turn occasionally until cooked.
  • Cut the smoked goat meat into bite-sized pieces and set aside.
  • Heat the oil in a large skillet over medium-high heat. Add the peppers; onion; curry; thyme and seasoning cubes and stir-fry for about 15 minutes; until soft and fragrant.
  • Add the goat meat and toss to coat with the pepper mixture. Adjust the seasoning if needed and cook for another 10 minutes; until the meat is slightly charred on the edges.
  • Sprinkle with parsley or cilantro if desired and serve hot or warm.
