  • Blend the cashew nuts; cane sugar; soy milk and coconut oil until they are smooth and creamy in the blender. To ensure sure everything is well mixed; you might need to scrape down the sides of the blender many times.
  • The mixture should be poured into an ice cream machine and processed as directed by the manufacturer; typically for 20 minutes or until thick and creamy.
  • When the ice cream is set; transfer it to a freezer-safe container and freeze it for at least 4 hours or overnight.
  • Take a scoop of the ice cream and savor it.

  • Tips:
  • Instead of crushing the seeds yourself; you may use roasted black sesame butter or paste; just make sure it's not black tahini; which is prepared from raw sesame seeds and has a distinct flavor.

  • If you don’t have an ice cream maker; you may freeze the mixture in a shallow baking dish and stir it every hour until the right consistency is achieved.
